I bought a 2019 powerstroke used with 16k miles on it. The day after I bought it the "water in fuel" light came on. In the past 3 weeks I've had it back to the dealership 3 times. The 1st time they changed the filters and the light went out but came back on 4 miles from home, the 2nd time they changed out the sensor itself...this time the light went out but came on the next day. The last time I took it(yesterday) they changed the wiring harness and put another sensor on it....this time it ran like a champ...better than I've ever had it run in the 3 weeks I've owned it but the sensor light came back on 20 minutes down the highway. Has anyone had this issue before and if so how was it fixed. Thanks

The sensor is pretty sensitive and will trip if the fuel/water separator is faulty. Since the sensor/harness didn't resolve it I would suspect the separator is faulty and letting water through.
