Are there any diagrams out there that could show me how to redo this wiring? It’s a hot mess & I frankly don’t know what I’m doing without instructions.

Hello C91, Welcome. There doesn't seem to be a direct True OEM under the hood wiring harness for the 76 model year that I can find, which would be the easiest to do. First below is a link to FORDifications site of wiring schematics, you'll see 1976 in the list, with about 9 pages.

With out going to deep, You see a flag(s) saying Fuse-able link, schematic should give the values so you can use a fuse instead. That Fuse-able link may feed as many as 3 wires in that cluster in your hand. If you have to, dissect the cluster to replace certain wires, do it. In the second picture, the black thing with the broken wire, cannot tell if it's just a connector or if it has a special function. Again the schematic should designate it's purpose if special. Finally, the Amp meter on the dash, is just tell-tale and 99-100 out of a 100, DON'T work. Test lights are OK, but having a DVOM (Digital Volt Ohm Meter) is good to have.

Always start at the Positive side of the battery and follow along, Printing the page(s) better than just looking here. Cap
