I'd do a search for what Ford offered for the 79 F-250, standard and optional wheels and tires.

A note to you, 79 was the first year Ford offered a F-350 4X4. I would say to you they offered one that you might call a Lo-Boy. It was not up there like a regular Hi-Boy. True Hi-Boys had separate mounted Transfer Case. I believe the TCase on Lo-Boy was attached to the transmission. Cap

76 was the last factory high boy, from '77 on they had an integral T case. But many people refer to any lifted truck as a high boy.
To know the offset, you need to know the width, I am changing some tires right now on my '84, it has 6" wide rims with 4 1/4" inside offset, but many people use wider rims on 4x4s. I am using 235 85 16s, on a 2 wheel drive, 245s would fit, but anything wider should have a wider rim. Check that they are all the same, I have seen a lot of mix and match rims on older trucks.
    I think the '79 F350 used 16.5s

It won't let me edit that post, but Ford used 16" split, or 16.5 one piece rims. 16' one piece rims were added in late '70s, and are backwards compatible, so most trucks have been converted to those.

Above I said 6" rims with 4 1/4 offset, what I meant was 4 1/4 backspace. 1 3/4 outside. so flange is 1 1/4 off centerline. But these are probably not the original rims on my truck. A wider rim will have more backspace to attain the same offset, I have parts trucks with 7 and 8 inch wide rims.

Hahaha should just open my eyes. Thanks

I want to change my answer. I re-measured the rim, with the tire off, turns out the offset is only half an inch off centerline. It sure looks like more, but 7 1/2 overall, including bead area, From bolt surface is 4 1/4 inside, 3 1/4 outside.
I was changing some tires today, the rims are stamped Ford, and dated 78 & 79, so clearly not original for my 84.
